The Kai Wasabi, 6.5-inch Nakiri Knife is not a cleaver as it may appear. It is a push cut (down and forward) knife made for vegetables and fruit. A very capable tool for slicing and dicing.
The 6.5-inch blade is made of a high-carbon, stainless steel, which allows the blade to take and hold a sharper edge, for longer. Additionally, the handle is made of a polypropylene and bamboo powder mix that provides the ultimate in comfort and strength.
All of the Kai Wasabi knives feature a traditional Japanese blade shape paired with Western style form and function; allowing the ultimate in durability, comfort, and precision for virtually any food preparation need.

This was my first order thru Kai Scissors and I’m totally impressed. My order was processed the next day and arrived incredibly well packaged and on time so I will definitely be doing business again. While this knife is intended for slicing and chopping vegetables & fruits it’s instantly became our most versatile frequently used. It’s a mini cleaver that also works great mincing meat. It’s also in a sweet spot for quality, definitely above average but not so exotic you have to be careful with it. The metal is also in a good range of hardness. It holds an edge but still soft enough to use a honing rod in between machine sharpening. I have to admit that I prefer Japanese cutlery. I have a pair of Matsuzaki hair shears that I purchased in 1985 for $300.
I used them for over a decade professionally, only sent them back to Japan once to be re-sharpened. To this day they’re nasty sharp.
