The Kai Seki Shoso Chinese knife, also known as the Chinese Cleaver, is 1 of 2 knives you will find in a traditional Chinese home.(The other being a fruit knife) The large blade is not only good for slicing and chopping, it also functions as a scraper to help move whats been cut to the pan, or it can be used as a press. Put garlic or ginger under the broad side of the blade and smash with your hand.
The 6.5-inch blade is made of a high-carbon, stainless steel, which allows the blade to take and hold a sharper edge, for longer. Additionally, the handle is seamless making for a stronger and more hygienic knife.
